The production of rice noodles has a history of more than 2,000 years. According to folklore, in order to unify China, Qin Shihuang sent troops to the south.
The Qin army was from Shaanxi and was used to eating noodles. However, the south only produced rice, not wheat. The Qin army had difficulty in transporting food and grass. They were new to the country and were not used to eating rice. Their combat effectiveness was greatly affected. The general ordered the cook to find a solution. The cook imitated the noodle making process, pounded the rice into rice noodles, steamed it, and rolled it into strips, which became the earliest rice noodles in Chinese history. Rice noodles occupy an important position in the history of rice products. They are a large amount of exquisite food after deep processing of rice and are deeply loved by people.
Rice noodles are characterized by their flexible texture, crystal clearness, whiteness, tenderness, and smooth taste. They can be used as snacks or staple foods. There are soup noodles, fried noodles, cold dishes, hot pots, etc., plus different ways of eating with local characteristics and flavors, such as Yunnan’s cross-bridge rice noodles, Jiangxi’s fried rice noodles, Guilin’s horse meat rice noodles, and Fujian’s Xinghua rice noodles.
